Hi. You get 2 blogs this weekend. And this one is 2 in 1… I seem to have a lot to say.
So, firstly some lovely Spring flowers to cheer you on your way.
The bluebells are out in my garden. Aren’t they gorgeous?

And now onto the food continued from my last post….
Last week I made this chicken korma from BBC Food, the recipe is here. It was really yummy, a bit spicier than a normal korma but not too hot.
David and I are eating nuts recently to try to improve our health. Lots of ground almonds in the korma. I know we should also be eating brown rice but keep putting that off, I find it a bit chewy.
We are also eating more oily fish. Tinned mackerel is great for this and very economical. We enjoyed this baked mackerel with potatoes and onions. Here’s the recipe. It was maybe a little bit too oily but otherwise very good. I’d have this again.
So, having made myself (and you lot) hungry all over again, I’m off to finish off preparing the roast chicken dinner for tonight. Have a good week! Xx
P.S The lamb rissoles were very good.. we had them for lunch with mint sauce.
The flowers are just beautiful..excellent photography 🙂..thank you for sharing. I’ve been adding more walnuts into the menu mix as I’ve read that they are excellent for a variety of reasons..I like the idea of adding nuts into a main entree.

Thank you 😊. I really don’t like walnuts, the texture mainly. Maybe I’ll look for more recipes with nuts ground up rather than obvious. We only like cashews and peanuts so far to eat on their own but that’s a start.

I do grind up the nuts – they are nice in breakfast cereal with berries or bananas..also good if you bake and like banana bread, you only get the flavor and not the texture if they are finely ground..it’s fun to experiment🙂

The flowers are beautiful! It’s so different up here. Grey, wet and soggy!! It’s lovely to see some colour. The korma looked super tasty too! Xx
