The long road ahead…

Hi, how’s it going my waffle readers? Been out for your walk yet today? Isn’t the wind cold? The sun has been trying to shine a bit but you probably got used to the gloriously sunny spring days during the week as I did and now want these every day.

This lockdown has to be our new routine. I expect we will all get into a manageable new regime, but it seems an awfully long and depressing road ahead. I will try to stay positive and count my blessings of which I have many, I know. Family, friends, health, food, blog.

What’s the best thing you’ve eaten today? This weekend? Hopefully you’ve had some tasty meals and snacks. I really enjoyed this soup we had for lunch, really delicious.

It’s from Waitrose, called “Spicy Keralan Chicken Soup”. Nice comfort food. The “Cook” Beef Wellington with dauphinoise potatoes we had last night was sublime not to mention the award winning margaritas.

On the menu tonight is Waitrose lamb kleftico with new potatoes and broccoli. Followed by home made home grown rhubarb crumble, can’t wait! What person in their right mind doesn’t love rhubarb crumble? My husband apparently.. oh well all the more for me and he will be more than happy with a bowl of Cornish vanilla ice cream as usual.

  1. We too are off for our daily walk, despite my husband’s moans I will happily wear my hat as I feel it’s my rebellious streak in challenging times. So, if you see a middle aged couple- OMG are we really middle aged? – striding around West Windsor then that’ll be us! I’ll do my usual running commentary about trees, birds, foxes, nice front doors, potholes & other hugely interesting things that seem, for some bizarre reason, to bore much other half to bits.
    Cooked sausage pasta tonight for the fam, pork & caramelized red onion sausages from Waitrose that I slit & made little sausage balls with peppers, onions, mushrooms & garlic in a spicy tomato sauce. Veggie version for me – both options went down very well & a hearty dinner & 4 full tummies. Hence the walk to justify a filling meal.
    Off I go…… now where’s my hat hibe then…..???
